Doctor visit

Well, I finally made it to the doctors office. I have been sick since Virginia, and still have an infection, so she gave me an antibiotic for that. Other than that, she was most impressed, my weight, blood pressure and cholesterol were all way down. She asked me how I did it, I told her diet and exercise. Michelle is looking for ideas on salt reduced healthy food, so here are some of my ideas. I love the food here in New Orleans but it is so unhealthy, so I adapt it as follows:

Use olive oil instead of butter and or cream. So, as you know, with Creole cooking "first you make a roux", fine I make my roux with olive oil, and less than the recommended flour. Then I use more of the "holy trinity" than recommended, that is, onion, peppers and celery. When they are cooked and combined I add the Cajun seasoning and crawfish and enough chicken broth to get the desired consistency. Then instead of serving over rice I serve over cauliflower, less calories, tastes good and I get another vegetable. So, there I have four vegetables. Then next day I use it as a base and add chicken broth, and then add as many other vegetables as possible, tomatoes, peas, carrots, spinach, asparagus, black beans, etc. Tasty good for you soup. All fresh vegetables, (except the peas) no salt. Yum.
